Banana Spinach Smoothie

This smoothie is a get-up and go sort of drink. You will feel energized all morning long as well as being filled with goodness.

 

1 Medium Banana, ripe

2 c packed, fresh spinach

1/2 c tap water

Directions:

In a blender, combine all ingredients and blend until smooth. Add additional water if necessary to make the smoothie thinner.

Smoked Trout with a Goat/Cream Cheese Spread

This appetizer is a crowd pleaser and so simple. I got the idea when I needed to make a last-minute dish to bring to a rooftop event. This appetizer is perfect for anyone who is allergic to ocean residing fish.

Ingredients:

4oz of ‘1/3 less fat Cream Cheese’

3oz. plain Goat Cheese

1/4c. fat free milk

2 large, seeded, sourdough baguette's, sliced on the diagonal ½ in. thick.

5oz. 'Ducktrap', smoked trout

16oz. fresh, cherry tomatoes

1/2 tsp. olive oil

1/2 tsp. MCT Oil

1/2 tsp. salt

1/4 tsp. black pepper

Directions:

Preheat your oven to 350 degrees Fahrenheit, roast.

Line a large baking pan with parchment paper and set to the side.

On a clean cutting board with a paring knife, create a slit in each individual tomato – and place on the pre-lined baking sheet. Coat the slitted tomatoes in the MCT oil and olive oil. Toss gently to ensure each tomato is covered in oil. Sprinkle with the salt and pepper and place in the oven. Roast for 20 minutes. Your kitchen should smell of warm, sweet tomatoes.

Meanwhile, Slice the 2 baguettes on the diagonal and place onto a serving platter or board. And set off to the side.

Using a microwave safe bowl; combine the cream cheese, goat cheese and milk. Set the microwave for 45 seconds. Remove the bowl from the microwave and stir the contents. You will want the consistency of the cheese and milk mixture to coat the back of a spoon when you dipped into the mixture. If need be, add1 additional tablespoon of milk at a time, stirring in between each addition, in order to achieve the desired consistency.

Set the cheese mixture aside to cool to room temperature.

Once the cheese mixture is cooled. Spread 1 & ½ tablespoons onto each baguette slice. Top each baguette slice with a small, long piece of cold smoked Trout, removing the bottom skin of the trout first.

When the tomatoes have been removed from the oven and slightly cooled, adorn the top of each baguette slice with the tomatoes. 

Garnish with an additional sprinkle of salt and pepper across the top of the finished product and serve at room temperature.
